My experience pursuing this culinary course was interesting and informative and it also taught me a more hands-on approach to the Science of food. The Caribbean Cuisine Culinary Institute environment was conducive to learning, training and skills development. My training was conducted  using the simple and correct methods of executing cooking techniques which are to be utilized in the workplace or at home. The teaching styles of the the Tutors made it interesting given the circumstances of the world over the past one and a half years. During the time spent at the institution my knife skills improved and the use of the elements and principles of design helped to develop my plating skills. The various Mangement styles, the importance of Nutrition, Food Science and the researching of the Historical and Cultural origins of well known Cusines were also an integral part of the Culinary experience.

On Tuesday February 4 th , 2020, my journey commenced, as I began my ACF Certified Culinarian Course. From day one, this course was informative, educational, enlightening and not to mention, enjoyable. The only negative aspect of this journey is the pandemic, which has caused some delays to the entire process. However, no one had control over this. In my opinion this is a wonderful course that is being offered by The Caribbean Cuisine Culinary Institute; it has been a great experience overall and a fantastic avenue for me to become Certified, as this has always been my dream. Even though I have been in the industry for quite some time, this has been a great way for me to recap what I already know, learn new techniques and skills, while enhancing my knowledge and standards in food preparation and cookery, hygiene and food safety. All kudos goes to the Chef and Instructors for imparting their knowledge and techniques, while making learning easy and exciting. They have all been patient and understanding, always willing to explain procedures and practices thoroughly, even encouraging us to continually strive for excellence. It is my desire and hope for more persons to become Certified and this course and school provide the perfect avenue of opportunity to accomplish such.

Caribbean Cuisine Culinary Institute has prepared me to be globally competent by giving me an opportunity to build a strong foundation that will stand me in good stead when I enter the culinary industry. I have been able to hone my skills and explore more of what I am capable of and to always remember that cooking is a life. At the end of the day, it is always about having the right and positive attitude, working quickly, efficiently, neatly and safely, that will help you not only learn skills, but also persevere and overcome the many difficulties you will face. A diploma doesn’t make you a Chef, so always keep your feet on the ground.

Enrolling at CCCI for my certification with the American Culinary Federation (ACF) has been an eye- opening experience. I never knew that so many aspects of study were involved in running and navigating the inner workings of a kitchen. I can say that what I have learned and continue to learn will enable me to grow both as a person and as a Chef.

First, I must give thanks to GOD for life and  bringing me thus far, as I left my home country to travel to Barbados to attend the Caribbean Cuisine Culinary Institute. I must say the Journey was worthwhile despite some personal struggles, which at times made me feel like giving up on my dream to study and to become certified. However, Chef Edey and other members of the CCCI staff helped me to overcome these challenges and made the journey easier through their genuine interest in each student’s well- being and the mentorship they offered. I will leave CCCI knowledgeable about food science and so many other aspects related to food preparation. To my daughter, thank you for keeping me motivated!

I will forever cherish my experience at the CCCI. The teaching style was one that I was comfortable with and as such, I was able to learn at a pace that was best suited for me. I would recommend the school to anyone thinking of pursuing a culinary career, as the Instructors are understanding and determined to ensure that students are not only taught, but also clearly understand, what is required to be successful in this field.

The Certified Culinarian programme offered by CCCI is the most valuable culinary education anyone can receive. Whether you are a seasoned chef or a young cook, this course will not only improve your knowledge, but will also hone all of your senses to be in harmony with your ingredients and will take you to the next level.

My enrollment at Caribbean Cuisine Culinary Institute was pure coincidence, but in the end, I managed to gain a lot more than I imagined. Initially, I was just curious if I had any interest at all in the field, but now if, by chance, I continue to pursue a career in the culinary industry, I can say with confidence that I know what it is that I am doing; from the detailed theory to the hands-on practical execution, I have gained a lot of knowledge. With all that said, I think my time at CCCI was well worth it.

The best decision I made was to pursue my American Culinary Federation Certified Culinarian designation with the Caribbean Cuisine Culinary Institute. While I have gained a better understanding about cooking, the knowledge gained about preparing and keeping food safe, stands out for me. The course has not been without challenges thanks to the COVID-19; however, the Instructors and Administrative staff at CCCI have done everything possible to ensure that the students remain on track. When I receive my CC designation, I will not only feel a sense of accomplishment, but it will encourage me to continue to work hard until I become a Certified Executive Chef.

I am honoured to be doing this American Culinary Federation Certified Culinarian course through the Caribbean Cuisine Culinary Institute because of the emphasis that is placed on the science of cooking. A lot of pertinent information is shared in both the theory and lab sessions and our instructors always go the extra mile to ensure that we fully grasp what has been taught.

From attending Caribbean Cuisine Culinary Institute, I’ve learnt that there is a difference between living your craft and knowing about it. As a Chef, you must choose to do things correctly everyday, from ensuring proper sanitation practices and knife cuts, to utilizing the best cooking methods for the items being prepared, to safeguard against falling into bad habits.
